Crowd Pleaser Recipe: Oreo Truffles

Happy 2011 people! I don't know about you but today kicks off my "healthy eating, exercising regularly" routine to make up for all the indulging I did over the holidays. It was certainly worth all the extra calories though!

We attended a great New Year's Eve party and I made the dessert below and it was gone in about ten minutes! You can switch this recipe up by using peanut butter cookies such as Nutter Butters or using peanut butter chips, white chocolate, mint chips...the possibilities are endless! I've put some tips that were helpful to me throughout the recipe in italics.

Oreo Truffles

Ingredients:
1 pkg. (8 oz.) cream cheese, softened (I used light cream cheese and nobody could tell the difference)

1 pkg. (1 lb. 2 oz.) oreo Cookies, finely crushed

(about 4-1/4 cups), divided 2 pkg. (8 squares each) semi-sweet chocolate, melted



Directions:

Mix cream cheese and 3 cups cookie crumbs until well blended. (Then, put the dough in fridge for about 20 to let it firm up)

Shape into 48 (1-inch) balls. (I only got about 36 balls. Once you form the balls, put them in fridge for an hour - this tip is HUGE and makes life much easier!)



Dip in melted chocolate (To dip the balls, use two spoons or a fork and a spoon to roll ball around in chocolate and gently lift out of the bowl. Be careful, they break easily.)



Place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.

Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator.
